White Wine by Sterling from Napa Valley, California. In making the 2006 Napa Sauvignon Blanc, Sterling destemmed 75% of the grapes and pressed the whole berries. Fermentation took place at 50?F to retain the fresh-fruit characteristics. The majority of the wine was aged for two months in stainless steel, with 10% aged in oak, a portion of which was very old. Light straw in color, this wine offers expansive aromas of grapefruit, melon, figs, citrus and pineapple. The notes of grapefruit, melon and fig are echoed on the palate, mingling with bright notes of citrus zest. Crisp, with a pleasant acidity, this wine has a rich mid-palate and a lingering, fruity finish. An ideal food wine due to its balance of fruit and acid, it pairs well with lime-marinated shrimp, chicken salad with walnuts and tarragon and grilled trout.
